Is the massive library project that comes with 8.1 the only VC++ example project available? Or are there some basic plugin projects/examples somewhere for someone just trying to understand the SDK?

No, the example project is the only example MAXON provides. (It would be too much work to separate the examples into different projects.) But don't let the number of examples in the project confuse you. You can easily study them one at a time.
